GREEK SALAD



Here is another salad recipe that is simple to make with easy to find ingredients. This salad has no tender greens, hence, you can make it ahead of time. It is truly a refreshing salad bursting with the flavors of olive oil, garlic, apple cider vinegar, dijon mustard and oregano. A perfect side to any grilled meat or seafood dish. Or, you enjoy it on its own.




INGREDIENTS

1 cucumber, cut lengthwise, seeded, sliced about ¼ inch thick

12-15 pieces of grape or cherry tomatoes, sliced in halves

Half red onion, peeled and sliced thinly

1/3 cup pitted Kalamata olives

½ cup Feta cheese crumbles

¼ cup fresh mint leaves

¼ cup extra virgin olive oil

3 Tablespoons apple cider vinegar

2 cloves of garlic, peeled and minced

½ teaspoon dried oregano

¼ teaspoon Dijon mustard

Salt and freshly ground black pepper for seasoning



INSTRUCTIONS

Except for the cheese and mint leaves, combine the salad ingredients.

In a separate bowl, mix the olive oil, apple cider vinegar, garlic, oregano, and Dijon mustard to make a dressing.

Whisk to incorporate the ingredients well.

Season with salt and black pepper.

Dress the salad

Drizzle the dressing onto the salad. Toss to mix.

You may chill salad in the fridge if you are not yet ready to serve.

Once ready to serve, place on a salad platter, sprinkle with feta cheese crumbles.

Garnish with mint leaves.
