On days when cooking seems to be labor, a pasta dish that is quick and easy to make but tastes just as delicious as an extensive full meal prep, is always welcomed. Especially when you have a sauce that has a rich, creamy and earthy flavor like a basil pesto.
INGREDIENTS
½ pound of cooked penne pasta (or any pasta of your choice)
1/3 cup (at least) of homemade basil pesto
Olive oil for sautéing
Grated Parmegiano Reggiano (or Parmesan cheese)
INSTRUCTIONS
On medium heat, in a pan or skillet, heat oil. Add the basil pesto and stir.
Add the cooked penne pasta and toss into the basil pesto. Make sure the pasta is well coated with the pesto sauce.
Sprinkle the pasta with cheese and toss. Turn off heat.
Serve hot or warm. Sprinkle additional cheese on the pasta before serving.
